Saffron production in Morocco

Saffron has been known since antiquity for its medicinal properties, nowadays emerging research have discovered exciting new uses for Saffron, as a preventive and curative treatment for many chronic health conditions.

It’s named as the red golden for the fact, that it is the most expensive spice in the world. It has been also prized through the ages, for uses in the cuisine for many centuries. People use it in the cuisine because it add a rich color, fragrance and unique flavor to the foods.

We Moroccans tend to use itregularly in while cooking, because it makes the food taste delicious. You may ask how saffron is harvested. Well the Berber inhabitants harvest it, by tweezers as soon as the flower opens.

It is preferable to reaped it early in the morning, to ovoid wilting the petals and ensure obtaining high-quality threads.
